Not so guilty pleasure: fruit cobbler

My mom wasn’t a stay-at-home mom but she sure does love to bake. I grew up loving and learning to bake from her, so I thought I would try to make two of my mom’s recipes and see if I could do them justice.

The first was cobbler, which I have only known as peach cobbler, but to my discovery, I could use other fruits. After giving me the recipe, my mom realized she has never added the one egg in the recipe calls for so I decided to add the egg and see the difference.

Ingredients:

  •  1 can fruit drained
  •  1 cup sugar
  •  1 cup flour
  •  1 teaspoon baking powder
  •  1 cup milk
  •  1 egg

Directions:

  1. Mix all ingredients besides the fruit in a bowl.
  2. Spray a pan with no-stick spray and then pour in the mixture.
  3. Drain the can of fruit into the pan first, and then add the pieces of fruit.  Make sure that the fruit is well spread out.
  4. Sprinkle sugar or brown sugar and cinnamon on top of the mixture.
  5. Bake for 15-20 minutes or until it is a nice golden brown.Screen Shot 2016-01-15 at 2.24.56 AM

Suggestions:

I usually wait five minutes before eating half the cobbler and then leave the other half for the next day. It tastes good heated up or even cold, but remember to refrigerate the cobbler.

With the addition of one egg, the mixture is less solid and golden brown. Though the cobbler tastes delightful with or without the one egg, my favorite is without.
